Most of us enjoy reflecting back on the things that brought us happiness and contentment in our childhood. Some of my fond memories include coming home from school to wonderful aromas filling the kitchen. My mom would often have freshly-baked chocolate chip cookies sitting on the table, waiting to be devoured by an eager child. I loved taking bites, as the warm chocolate oozed between my teeth. I don’t know which afternoon snack was best: the cookies, or a slice of just-out-of-the-oven Anadama bread, spread with peanut butter, which quickly melted from the warmth of the fresh bread.
Not only did my mom bake special treats for us, but she also fixed delicious and nutritional meals, because she loved her family. It was these small labors-of-love, as well as the time spent in the kitchen teaching me to cook, that made me desire to be like my mother. I wanted to give my family the same happiness and feelings of security I experienced as a child.
Through the years, my mom has shared many of her recipes with me, as I have with her. With summer upon us, I would like to now share with you this refreshing summertime salad.
10-oz pkg. fresh spinach leaves
1 qt. fresh strawberries, sliced
1 med. Grapefruit, peeled and cut up into bite-size pieces
¼ cup olive oil
¼ cup honey
1 TB lemon juice
2 TB poppy seeds
½ cup slivered almonds
Place spinach, strawberry slices, and grapefruit in a large bowl. In a glass jar, combine oil, honey, lemon juice, and poppy seeds. Shake to mix.
Just before serving, shake and pour dressing over spinach. Sprinkle with almonds and toss to mix.
